Steel Kitchen Knives

Steel kitchen knives are bar far the most commonly found knives on the market. They are inexpensive, easy to clean and highly resistant to corrosion. They are strong and still which allows them to hold a good edge for a long time but not as well as carbon steel alloy.

Carbon steel kitchen knives are some of the hardest and sharpest knives available. They are almost exclusively used by professional chefs because of their difficulty in maintenance and tendency to corrode and rust quickly. They have to be taken very well care of but other than ceramic knives can maintain the sharpest edge for the longest time.

High carbon stainless steel kitchen knives are a good mixture of carbon and steel that does not corrode as quickly as blades with higher carbon contents yet still holds and incredibly sharp edge. These blades are widely used in professional kitchens as well as home environments and are highly recommended.
