Chef knives received their name because of their almost international acceptance among the best chefs in the world. They are the most versatile and widely used knife around today and can be found in the nicest restaurants and the lowliest diners.
Chef knives are characterized by their large, wide blade with a slight rocker which allows for quick and smooth chopping and slicing. They are ideal for any number of cutting techniques from julienne to dicing.
Chef knives are also known as French knives due to their origins. It is basically a refined butcher’s knife that is widely used among western chefs. The blade is generally 8-14 inches long and 1.5-2 inches tall. The more popular German version has a much more pronounced rocker at the tip of the blade for “rolling” the blade through food.
